Chef goes wild with local produceWell-known “native cuisine” chef Andrew Fielke made a guest appearance at the Hills Market Kitchen at the Heart of the Hills Market at Lobethal last week combining indigenous foods with our local produce to create a unique menu for Hills Market Kitchen participants. Founder of the Red Ochre Grill and pioneer of creative native cuisine, Mr Fielke prepared and cooked a range of signature dishes for the audience to taste including filo pastries with his own Chilli Glace Quandongs and B.-d. Farm Paris Creek’s new Tilsit cheese; salad of rocket, Udder Delights Marinated Chevre, local pear and walnuts with his own Sticky Bush Tomato Balsamic dressing; local raspberry and riberry ice cream with his own Olida Almond Toast; and Woodside Cheese Wrights’ Edith cheese with his own Caramelized Aniseed Myrtle Figs and Pepperberry Oatmeal Cookies. Mr Fielke engaged the 30 guests with his passion and knowledge about the unique flavours and uses of native foods such as barramundi, saltbush, finger lime and lemon myrtle, offering tastings and demonstrating their preparation for use with our local products. Hills Market Kitchen Director Sarina Waterman explained that the Hills Market Kitchen aims to offer its guests an interactive food experience with celebrity chefs who use Adelaide Hills products to create a menu that showcases the region’s outstanding and diverse range of quality produce. “Andrew Fielke’s enthusiasm for regional and native food was infectious on the day and, combined with the delicious food and local Protereo wines from Adelaide Hills Wine Cellar at Lobethal, the response by guests was overwhelmingly positive,” says Ms Waterman. “They particularly enjoyed discovering new ways to use our local produce and being able to take those ideas home for use in their own entertaining. “The key ingredients used in the demonstrations are available for purchase on the day so that our guests can go home and recreate the dishes they have seen demonstrated and tasted at the Market Kitchen.” |

A farmer training course is taking land care to the next step to make sure Hills land is being used in a sustainable way.
The Australian Landcare Management (ALM) Group training course has worked so well it has been recognised with a State award and Mt Torrens farmer and ALM Group board director Bruce Munday could not be happier.
“We put a lot of care into developing a good training package,” Mr Munday said. The SA FarmBis Training Award reinforced the good work ALM Group had been doing according to Mr Munday.
He said the work of many people across four States was being recognised through the award for training excellence in Natural Resource Management.
ALM Group held workshops for local farmers last year and early this year, that aimed to help farmers be more environmentally responsible in their farm practices.
The now internationally recognised training system run by ALM Group stemmed from a group of volunteers who were interested in caring for the environment.
Mr Munday said the group had “done the relatively easy things, we wanted to look at the more challenging issues and try to position farmers so they can develop and advance from it”.
“The key achievement is that we have taken an internationally recognised environmental management system and made it practical and cost effective for Australian farmers without losing the important credibility and recognition factors,” Mr Munday said.

The specialty cheese industry in Australia is booming with more than 90 specialty cheeses being produced here. And specialty cheese remains the highest value-added dairy product produced in the dairy industry.
Now in its third year, CheeseFest 08 will kick off on Saturday 20 October at The Penfolds Magill Estate Restaurant. This state of the art restaurant will be converted into a cheese judging arena.
Founder of CheeseFest, Adelaide Hills Food member and cheesemaker at Woodside Cheese Wrights Kris Lloyd, said she modeled the event on European cheese shows.
"I travel extensively looking at cheeses and attending cheese shows, CheeseFest is what I considered to be the best attributes of all the shows rolled into one,” she said.
This year’s event begins on Saturday, October 20, at The Penfolds Magill Estate Restaurant which will be converted into a cheese judging arena.
More than 120 cheesemakers from around Australia and New Zealand have been invited to compete this will mean the judges will be faced with more than 200 cheeses.
The judging is headed by Chief Judge, Derrick Casey who will lead his panel through lots of smelling, prodding and spiting - no different to wine tasting, the cheese is spit into a spittoon.
Strict guidelines for judging include no chatting among the judges, no perfume or other strong fragrances. It is recommended not to eat garlic or heavily spiced foods the night before or have coffee on the palate the morning of judging - even the soap in the bathrooms must be unscented.
CheeseFest has three judging panels. The official judges panel, the winemakers panel and the media panel. The cheese that is awarded Champion Cheese of Show, The Penfolds Magill Estate Restaurant Trophy, will be eligible to enter the 2009 Grand Dairy Awards.
The Gold medal and trophy winners will be announced at 12pm at the CheeseFest 08.

Adelaide Hills tourism and related businesses are being encouraged to enter this year’s SA Great Regional Awards and the South Australian Tourism Awards, with both organisations recently launching their 2008 programs.
Nominations for the SA Great Regional Awards 2008 opened recently and close on July 11 with actual entries due by August 15.
The SA Great Regional Awards recognise and celebrate individuals and communities who have made a significant contribution to regional pride in SA.
Nomination forms are available online at www.sagreat.com.au or by contacting AHT. The awards night will be held Wednesday 3 December, at Auchendarroch House, Mount Barker.
There are 27 categories in this year’s awards, including tour/transport operators, wineries, tourism retailing, restaurants, events, outstanding individuals, B&Bs, luxury hotels and backpacker accommodation.
