Network Night at the Brasserie

 

It was really exciting to see Adelaide Hills Food members' product up in lights when 20 members sat down to sample celebrity chef Simon Bryant's magic with regional fare last month.

Simon's restaurant at the Hilton (The Brasserie) showcases South Australian regional produce, giving credit to the individual producers who grow, farm or create it and it is currently the Adelaide Hills' turn on the specials board.

Members from Udder Delights, Lucy Margaux Vineyards, B.-d. Farm Paris Creek, Hahndorf Venison, Hahndorf Hill Winery, Cocolat, Cottonville Farms, Interproduct and Buzz Honey were there to enjoy Simon's interpretation of the region's produce and to get the chance to talk to the chef about new products.

At The Brasserie entrance, we were greeted by an enormous Buzz Honey display of product and information and all around the restaurant there were shelves and crates packed with many other South Australian regional products, including Willabrand figs.

We sat and sipped Adelaide Hills wines as we watched the chefs prepare the foods from our region in the big open kitchen, then shared the delicious dishes including Bird in Hand Manzanillo olives in a prawn pasta, Udder Delights ashed chevre with roasted red capsicum, Willabrand figs in a sticky pudding, Buzz Honey in a baked custard dessert, Beerenberg mustard in a salad dressing, Foods from the Edge Ceasar Salad Dressing and Richard Gunner's Coorong Angus Beef.

The Buzz Honey baked custard was to die for.

Fair Food

Last week I attended the Don Dunstan Foundation seminar on Food Justice in SA which looked at some of the challenges in enabling access to adequate, nutritious, affordable food for everyone. Speakers included Prof. Fran Baum on food and health, Community Foodies - a programme of volunteers helping to bring better food to their communities, Jackie Hunter who has worked extensively with community gardens and Zannie Flanagan of Adelaide Showground Farmers Market. It was very interesting to consider food from a more fundamental perspective, although as Zannie pointed out, people have the right to the pleasure as well as the sustenance of good food

This is the start of Fairtrade fortnight. Increasingly food, particularly beverages form part of the Fairtrade portfolio and Guillermo Vargas, Fairtrade certified Costa Rican Coffee Grower will be speaking in Adelaide on May 2. Adelaide Food and Cooking Show

This will be held alongside the Home Improvement show at Wayville Showgrounds on July 6-8. They are offering a 6x2m marquee for our region and there will be an opportunity for tasting and sales. Solupak

Solupak 2007 will be held on June 4-5 at the International Centre, Regency TAFE, South Australia's premier food packaging, processing and technology Exhibition and Forum for the food and beverage industry.

There is an expo, seminars and machinery demonstrations.

The event opens for registration at 12.30pm and will run until 6pm on the Monday and 10am - 4.30pm on the Tuesday. Registration form [PDF 530kb].

A cocktail party will also be held on June 4 in Graduates Restaurant.

Food Safety Training

Andrew Thomson, Lecturer in Wine, Viticulture and Regional Food at Barossa TAFE is offering basic food safety training and also HACCP for small food businesses.

A training proposal includes specified training units delivered from the Nationally Accredited Food Processing training package. Proposal outline [PDF 55kb].

Information for small to medium food processing companies

We implement a HACCP program within food processing companies.

The program is delivered over several weeks with each business receiving a pack which includes workbook containing information on assembling and implementing a HACCP plan and example documents. I will go through the concepts of HACCP systems and assist the businesses in getting started. Also each business will receive a CD containing templates for their own plan and records to develop support programs.

On the following weeks Brian Thorn and I will help each participant individually develop their plans. Brian is a food technologist and an expert on labelling and nutritional panels.

Also included in the package is 2 hours one to one mentoring with the individual businesses, taking place at their premises.

This is followed up with an external audit to ensure all requirements of Codex are met and the businesses are using HACCP procedures correctly.

Participants can be from any sector of the food or wine industry, generally processors of products eg jams, chutney's, mustards and pickles, cheese makers, olive oils or pickled olives, beverages, cakes and tarts, really anyone producing a food or beverage product for sale. We have had chefs who are looking at new ventures, primary producers who wish to value add their produce or need the systems to satisfy market demands, meat producers, butchers, soft drink, fruit juice, wine and aquiculture.

At Baylies of Strathalbyn we are now producing 6cm pastry shells which we are selling to hotels like the Stamford.

Food media tour

With Tasting Australia being held in October, we just couldn't miss the opportunity to show off Adelaide Hills produce at one of the nation's most influential and best attended food festivals that hosts some of the world's top chefs and media.

So we are organising our own food media tour with around 40 interstate and overseas journalists spending a day experiencing the delights of the Adelaide Hills so they can all go home and write lots of newspaper, magazine, radio and TV stories about the region's fabulous food.

The plan is to bus all the media up to the Hills from where they are staying at the Hyatt in Adelaide and split them into about four groups, each to take part in hands-on cheese making, vine leaf and olive bread making, venison sausage making, honey extracting and chocolate making.

At lunch time all the groups will come together at a farmers' market-style lunch with the region's wine and food producers, the wine media (who will also be visiting the Hills on the same day) and local chefs. Everyone will have to put their own creative combinations of local produce together for a communal long-table lunch.

This exciting event will coincide with the launch of the new 2007 Adelaide Hills Food Guide and Justin Markos' Mt Lofty House-Adelaide Hills entry in the Culinary Competition.

Rural Industries Youth Advisory Group

The Rural Industries Youth Advisory Group is seeking nominations from young people (18 to 35 years) who want to make a difference to agriculture, fisheries and forestry related industries.

The role of the Advisory Group, formerly known as the National Council of Young Farmers, is to advise the Australian Government from a youth perspective on issues affecting agriculture, fisheries and forestry related industries and the young people within them.

Participation on the Advisory Group also presents a tremendous opportunity for young people to develop their skills, networks, and build their reputation and ability to influence positive change in Australia's industries.

Young people from agriculture, fisheries, forestry and all supply chain and related industries such as agribusiness, processing, research, retail, natural resource management are encouraged to apply.

Food groupies

After the recent attendance at the Udder Delights network night by members of Food Barossa and a meeting last week with members of Fleurieu Food, we have discovered that as food groups representing the food producers in our regions we face similar challenges, but are also quite different by the nature of the individual environments, businesses and people operating within them.

We realised that we have much to gain from each other - new ideas, ways of working, etc, to ensure the future success of the groups' work in promoting regional food businesses for the long-term success of our food industries which ultimately create wealth and jobs for our communities.

A forum at which food group members across many regions can gather to discuss common issues, such as branding, food tourism and sustainability and the chance to share ideas, is in the very early planning stages and anybody interested in becoming involved in this gathering should contact Food Industry Development Officer Denise Manson on 08 8131 0133 or 0417 085 684 or food@southcentralacc.com.

 

2007 Food Guide

Plans for the 2007 edition of the Adelaide Hills Food Guide are well underway. Hills artist Stephen Trebilcock's work of iconic Adelaide Hills produce (eg. apples, pears, cherries, strawberries) will feature on this year's cover. Stephen's bold and colourful work is well known and some examples of his work can be seen on the walls of Hahndorf Hill Winery's cellar door.

As well as listing all member businesses as we did in the 2006 edition of the Guide, we are working on developing the food tourism aspect of the 2007 Guide so that visitors to the Adelaide Hills who are looking for more than just views and wine tasting can have a more full sensory experience of the region by sampling some of our fantastic food products. To do this, we plan to include one or two food trails, on which people are able to taste and purchase Adelaide Hills produce, and to reestablish Taste the Adelaide Hills, where restaurants feature at least one dish on its menu or special's board that showcases the region's produce. This sounds like nothing new, but if we can put some structures in place Hills food will be far easier to promote in the media and by word of mouth.

We are also looking to include more winery cellar doors and accommodation and tourism operators that feature, stock or serve local produce in the 2007 Food Guide.

Any stock and promotional photos (digital, transparency or paper copies) any of you have filed away would be really useful for the 2007 Food Guide reprint.

Funding for info packs

Yay! Adelaide Hills Food would like to thank Adelaide Hills Regional Development for the financial assistance provided to complete our information pack project.

The Regional Development Board recognises the food sector as one of the key sustainable economic drivers for the Hills region and shares some common objectives with the food group. In its support for the growth of the food industry in the region, the Development Board has offered $2000 to help us produce 200 promotional information packs that include comprehensive information about the Adelaide Hills Food group for prospective members, friends and the media.

It was decided by the group that a folder containing information about the organisation and its purpose is an important marketing tool for membership growth and media awareness.

The folder will contain a letter of invitation from the chairperson, information about the group, its membership and member benefits, a copy of the group's strategic and business plan, a copy of the food service and retail listings, copies of the latest newsletters, information about the website and the groups' involvement in farmers' markets and food trails, a copy of the Adelaide Hills Food Guide and application forms to become a member or a friend.

Adelaide Hills Farmers' Market

I have been working closely with Glendar Pedlar, marketing lecturer at Adelaide City TAFE, for the last few weeks to further research the feasibility of starting a Farmers' Market in the Adelaide Hills. Three focus groups have taken place here at SCACC, and TAFE students have been able to find out more about the expectations of what would be available at a Farmers' market. Two groups were based on people with children at home and a third on empty nesters.

The information gathered here has been incorporated into a questionnaire, 400 copies of which are currently being distributed by the students. We have offered a prize of a hamper of AHF food to encourage return of the questionnaires, so I will be knocking on your doors soon for product! Three sites are being considered. Uraidla Showground, Duck Flat Community Garden at Mt Barker Hospital, and Oakbank Racecourse.

 

Future FIDO funding

As many of you know, the funding for the FIDO positions finishes on June 30, 2007, and until the Premier's Food Council meets on May 2, the future remains uncertain. It is likely that there will be funding for some FIDOs but a reduced number, and the emphasis is likely to be for them to work more with growing businesses and not closely with the Food Groups. I will let you know as soon as I hear more.

On April 24 I attended a meeting of the Sustainability Workgroup which looks at future options for Food Groups. Michael Edgecombe of Indigo Consulting presented a draft report that he had been commissioned to write by Food SA. Of key importance to the group are his recommendations on a structured approach to sustainability and he makes the point: "The benefits sought by Food Group members must be matched by the Food Group's available resources. As a crucial first step towards sustainability, therefore, each Food Group must have a frank internal discussion about what its members want from the Group, and, importantly, what time and money the members are prepared to invest in the Group to gain these benefits".

Christine's cakes

Christine* Feinle-Bisset, of Christine's cakes based in Uraidla, has recently joined the Adelaide Hills Food Group as a Friend. Together with her husband, Tom, Christine established Christine's cakes in 2006, in order to share with as many people as possible the opportunity to experience authentic and truly home-made German bakery goods of the highest quality.

Christine grew up in the countryside of Southern Germany, making cakes and experimenting with and adapting recipes from an early age in her Mum's kitchen and, thus, has always had a passion for home-baked cakes, gateaux (rather un-German!), biscuits and breads. Christine moved to Adelaide in 2000 with her work as a nutritional scientist, after living in England and Switzerland for a number of years.

With the founding of Christine's cakes, Christine has fulfilled her dream and now produces a range of delicious home-baked cakes, based on old family recipes that have been tried and tested on many occasions at happy family gatherings, including her signature cakes "Schwarzwalder Kirschtorte" (Black Forest gateau), "Bienenstich" (bee sting) and "Kasekuchen" (baked cheese cake with quark). Experiments have also resulted in unusual cakes, such as a "Baked Chestnut Ricotta Orange Cake", and wonderful German-Australian fusions, such as the "Pear Crumble Cake with Tumbeela lemon myrtle". And many more ...

The cakes are a celebration of the natural flavours and diverse textures of the main ingredients, which are of the finest quality and sourced locally from organic/spray-free produce wherever possible.

Heart of the Hills Market

 

Autumn in the Adelaide Hills conjures up delightful and delicious things to do - one of which is to visit the Chocolate and Nut Festival held at the Heart of the Hills Market. Chocoholics cannot miss this event as there will be free tastings from confectioners around the state as well as an interesting selection of nuts and dried fruits available from local producers.

For the real chocolate "nuts" there will be a chocolate competition to test your taste buds and of course prizes of chocolate for those who win.

The Chocolate and Nut Festival will be held over the Mother's Day weekend (May 12th & 13th) so you can spoil your Mum with a great selection of chocolate or you may want to choose something else from other traders at the Heart of the Hills Market , the Old Woollen Mills, Lobethal.

So come on up to the Old Woollen Mills between 10am and 4pm on Saturday 12th May and Sunday 13th May for a day of feasting on life's little luxuries.

 

In the mood for chocolate

It is said that the experience of eating chocolate can cause a lift in one's mood.

Scientists have been studying this effect of chocolate for years and have discovered over 300 known chemicals. Among these are various different stimulants including caffeine, that increase the activity of neurotransmitters in the brain that give us that jolt associated with coffee. But that does not entirely explain that certain euphoric sensation chocophiles the world over experience at the first bite, sip, or crunch off all things chocolate.

Free tastings from confectioners around the state as well as an interesting selection of nuts and dried fruits available from local producers. We also have a chocolate fountain .

For the real chocolate "nuts" there will be a chocolate competition to test your taste buds and of course, prizes of chocolate for those who win.

Feast for the Senses

As a departure from previous festivals, Tasting Australia 2007 will begin with a major public celebration, the Feast for the Senses on Saturday 13 October and Sunday 14 October 2007 along the Adelaide Riverbank Precinct beside the River Torrens. This will be a curtain raiser for the rest of the festival and a chance for visitors to meet some of our top producers.

For the first time the event will run over two days, now offering exhibitors the chance to showcase and sell their products Saturday afternoon/evening, as well as Sunday. With FREE entry into the Feast for the Senses in 2007, visitors will bring with them their appetites for the best in gourmet food, fine wine, premium beer, coffee and beverages that Australia has to offer and we urge you to be there too.
